Nicaragua Ambassador to Taiwan Mirna Mariela Rivera Andino assumed office last year on Oct. 14. Formosa News reporter Stephany Yang caught up with her to learn more about her favorite Nicaraguan cuisines, as well as her goals as the Nicaraguan ambassador to Taiwan.

Typical breakfast will always include this. It”s called Gallo Pinto.
Nicaragua”s new ambassador introduces a traditional Nicaraguan breakfast called Gallo pinto. It consists of rice and beans, and is typically paired with coffee, fried eggs, and avocado, and cream cheese in the morning.

As you can see it”s very simple. It”s just rice and beans. But we refried it and seasoned it. We will eat with cheese, cream or tortilla.
Here at the park, she brings out this other traditional dish called nacatamal, which is eaten during holidays such as Christmas and other special occasions. It”s very similar to Taiwan”s zongzi.

I like to eat zongzi. But I put a bit of lime in it. Because I”m used to the more sour flavour of this. So I always make my own. (Nacatamal) is a bigger version of zongzi. It”s made of corn, potatoes, and we added vegetables in it or usually pork and beef. For me, it always have a taste of sour.
Rivera formally assumed office as Nicarguan ambassador to Taiwan on Oct. 14. She studied in Taiwan on a scholarship program and graduated from Ming Chuan University in 2018. She says what she loves most about Taiwan is the kindness of its people.

The Taiwanese people are so friendly. Everytime they see you, if you are a little bit scared, they take care of you. For example, it”s a rainy day, and I will think it”s the worst day of my life because I forgot an umbrella. Somebody will come over and just give me one. Or tell me the address. I always felt like I was taken care of. That”s the best thing that I discovered from Taiwan from Day 1. From Day 1, the Taiwanese people made me part of their homes and their families. I think that”s the best part about Taiwan as a foreign student because you are always scared of what you are going to do alone? But you never feel alone here. You make friends fast.
Even during the COVID19 pandemic Taiwan and Nicaragua have maintained close trade ties. In October, Taiwan External Trade Development Council collaborated with Nicaragua in a virtual trade expo to promote Nicaraguan seafood. Rivera says the most important Nicaraguan export product is lobster, followed by shrimp. Taiwan is a major buyer of Nicaraguan products, accounting for more than 28% of exports last year. In her first few months as ambassador, Rivera plans to promote more Nicaraguan products in the Taiwanese market.

I would also like to promote more of our products because even though we are really present in the Taiwanese markets, there”s a lot more opportunities to grow. I”d like to promote a more diverse input of products into the Taiwanese culture. We have alot that you would love. We are the second greatest exporter of beef. I heard that eighty percent of the Beef Noodles is supplied by Nicaraguan beef and Paraguayan beef.

Rivera says another one of her goals as an ambassador is to strengthen cultural ties. One example of promoting Nicaragua culture in Taiwan is the Nicaragua Park in New Taipei City. A few months ago, a new sign was created at the park. They”ve added images of Nicaraguan traditions. Rivera says the park serves as an important symbol of the strong relationship between Taiwan and Nicaragua.

As an ambassador during my term, I”d like to help strengthen the relationship of cooperation between Nicaragua and Taiwan. I want to bring more closer together the people or culture traditions and introduce more of Nicaragua culture to Taiwanese people. I want our culture and our people to translate more into Mandarin. So people can know about our literature, about everything that we have to offer.
As the Nicaraguan ambassador to Taiwan, Andino hopes to further strengthen the ties between Taiwan and Nicaragua, and introduce the beauty of each country to the other.

Now, where to travel in Nicaragua? I have often been asked, where my favourite place to travel in Central America is and after having given it a lot of thought, I concluded it is Nicaragua. Now of course, currently in 2018, Nicaragua is going through some tough times, but tourism will return to Nicaragua and the doors will open to travel Nicaragua once again and when you do plan to visit Nicaragua, you can use this top 5 places to travel in Nicaragua video to outline my personal favourite places, cities and towns in Nicaragua.
Here we go through my favourite 5 places you should visit when travelling Nicaragua starting at 5 The Corn Islands. Off the coast of Nicaragua, Big and Little Corn Island are two paradisical chunks of sand completely surrounded by gorgeous water. Sit back and relax!
My 4th favourite place in Nicaragua is the fun beach party town of San Juan del Sur. A lot of people love San Juan as it is called in Nicaragua, and as much as I did enjoy it, I was not in Nicaragua to just party so I found San Juan del Sur fun, but there were other better places.

The biggest surprise whilst travelling through Nicaragua was my third favourite place, Leon in the north of Nicaragua. A place I thought only existed on the tourist trail for Volcano Boarding, Leon is actually a very cool, and authentic city!

2nd best place in Nicaragua is Granada and Laguna de Apoyo. The town of Granada is gorgeous and colonial and right beside it is the volcano crater lake of Laguna de Apoyo, a pairing that is an absolute must visit when in Nicaragua.

The BEST Places in NIcaragua whilst travelling through, I found was … ISLA OMETEPE. The island of Ometepe is a volcano island located in the enormous lake which covers a large area of Nicaragua and it is an unusual lost world that I simply loved. The video below shows us scootering around the island, one of the best days of my life.
